The Estonian manufacturer of freeze-dried foods “Meki” has arrived

The idea was born out of a love for healthy food, just as all great things can start out of chance and necessity. In 2011, the founder of Mermi searched for freeze-dried strawberries in the retail chain with no added sugars to supplement both muesli and breakfast cereals. Search failed. So there was no choice but to delve into the secrets of freeze-drying and learn how to make perfectly freeze-dried strawberries yourself, which would have the original sweet taste and smell of Estonian strawberries. Today, we are the first and only factory in Estonia using freeze-drying technology.

What is freeze drying and how does it work?

Freeze drying is a process in which water is separated from the frozen product in a vacuum environment using a phenomenon called sublimation – the change of water from a solid form to a gas.
Using this method, cell breakage is minimal and the shape, appearance, smell, taste and nutritional value of the product are preserved.

Why is freeze drying necessary and where are products made in this way used?

Products dried by the freeze-drying method are used in several different fields, the main ones being the food industry, as well as the cosmetics and pharmaceutical industries.
In retail, the main use is a healthy and tasty bite as a confection.
Depending on the product and the packaging, freeze-drying extends the product’s shelf life up to three years without any loss of quality, which makes transport, storage and use of freeze-dried products very convenient.

The basic belief is that food must be:
